Whole30 Frittata Recipe

  • 8 eggs
  • 1 bell pepper sliced
  • 1 yellow onion sliced
  • 4 yukon gold potatoes
  • 1 tbsp olive oil
  • salt and pepper to taste


  • Set oven to broil
  • poke potatoes all over with a fork. place on a microwave safe dish and microwave on high for 6-7 minutes. remove and let cool before handling.
  • in a large oven safe skillet heat 1 tbsp of oloive oil on medum heat. add onions and saute for about 2 minutes, add in peppers and continue to saute for another 5 minutes until tender crisp.
  • meanwhile, once potatoes have cooled slice and dice them. add to the pan with the peppers and onions and cook for 3 minutes. season with salt and pepper
  • add in egg mixture and let set for about 5 minutes. transfer to the pre heated oven on broil and cook until top is no longer runny and slightly browned.
