Unveiling the Ingredients: A Symphony of Flavors in Every Spoonful

Before we delve into the cooking dance, let’s take a closer look at the ensemble of ingredients that will make this lentil soup a masterpiece for your taste buds.

  • 1 medium onion
  • 4 celery stalks
  • 4 carrots, peeled
  • 1 tbsp olive oil
  • 1 bag dried lentils
  • 3–4 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried thyme
  • Salt and pepper to taste

Now that we’ve got our cast ready, it’s time to roll up our sleeves and start cooking!

Prep and Saute – Setting the Stage for Flavorful Harmony

Step 1: Finely Chop, Sauté, and Let the Aromas Dance

Begin the culinary symphony by finely chopping a medium onion, four celery stalks, and peeling four carrots. In your trusty pot, heat up a tablespoon of olive oil. Throw in the veggies and let them sauté until they’re tender and emitting that irresistible aroma that promises deliciousness.

Rinse and Sort – Lentils Take Center Stage

Step 2: Lentils – The Cool Kids of Legumes

While the veggies are getting acquainted in the pot, take a moment to rinse a bag of dried lentils. Give them a thorough sorting to ensure there are no unexpected guests in your soup. Lentils bring not only nutrition but also a quick-cooking charm to our flavorful creation.

Combine and Simmer – The Flavor Symphony Unfolds

Step 3: Creating Harmony in the Pot

Once the veggies reach that perfect tenderness, it’s time to invite the lentils to join the party. Pour in 3 to 4 cups of vegetable broth – the amount depends on your preference for thickness. Add a bay leaf, a teaspoon of dried thyme, and season with salt and pepper to taste. Stir the pot, and voilà, you’ve got a medley of flavors coming together.

Bring to a Boil and Reduce Heat – Let the Soup Waltz in Simmering Serenity

Step 4: A Dance of Boiling and Simmering

Turn up the heat until your lentil concoction starts to dance with joy. Once it reaches a gentle boil, dial it back to low, cover the pot with a lid, and let it simmer for about 25-30 minutes. This is when the magic happens – the lentils soak up all the goodness, creating a thick and hearty soup that promises to be the star of your table.

Adjust Seasoning and Serve – The Grand Finale

Step 5: A Culinary Crescendo

Before the grand finale, give the soup a taste. Adjust the seasoning according to your preferences – you’re the conductor of this flavor symphony. Bid farewell to the bay leaf; it’s played its part. Ladle your creation into bowls, and if you’re feeling a bit fancy, pair it with some crusty bread for the perfect soup-dipping experience.

Enjoy the Comfort – A Standing Ovation for Your Taste Buds

Now comes the best part – kick back, relax, and savor the warmth of the Best and Easy Lentil Soup. This isn’t just a meal; it’s a warm hug on a cold day, a celebration of simple ingredients coming together to create something extraordinary.

Nothing says comfort like a warm hearty bowl of lentil soup. My Best and Easy Lentil Soup Recipe without  tomatoes is a wintertime hero.

With the New Year upon us and trying to incorporate some healthier meals into dinnertime along with colder temperatures (at least here in NY) lentil soup is my rockstar. It’s comforting, hearty, filling and nutritious. Lentils really got it going on! 1 cup of lentils is jam-packed with 18 grams of protein they are high in fiber and low in fat. Throw in some basic veggies’ little veggie broth and seasoning and there you have it, the perfect bowl!

Lentil soup is also perfect if you have little ones. Lentils are a great source of protein for them as well and the lentils and veggies are a great mushy consistency if your babe is still waiting on some teeth to pop in. You could also throw everything in the food processor (remove bay leaf before blending) and blend it down even more if you’re not quite comfortable with the whole pieces yet.

  • 1 medium onion
  • 4 celery stalks
  • 4 carrots peeled
  • 1 tbsp olive oil
  • 1 bag dried lentils
  • 34 cups vegetable broth
  • 1 bay leaf
  • 1 tsp dried tyme
  • salt and pepper to taste

  • rinse lentils in a strainer with cold water
  • in a large pot – heat olive oil over medium heat
  • sauté onion, celery and carrots about 2 minutes
  • add water – about 3 cups
  • now add seasoning – 1 bay leaf, dried thyme (whenever I am adding dried herbs I wake up the flavor by rubbing the herbs together a bit) and salt and pepper to taste.
  • add your lentils and bring to a low boil. cover for about 15 – 20 minutes
  • check on the soup and as the water evaporates add in vegetable broth. I like my lentil soup on the thicker side so I add closer to 3 cups of broth but add more if you like a soupier consistency
  • reduce heat to low and cook for about 30 minutes or until lentils are tender
  • remove bay leaf and enjoy!
