- 4 large flour tortillas
- 1 tbsp olive oil
- 1 cup + extra for dipping – marinara sauce, homemade or store bought
- 1 tbsp pecorino romano
- 1 cup shredded mozzarella
Instructions
- in a large skillet, heat olive oil over medium heat
- place one tortilla in pan and move around the pan so the olive oil in evenly coated on the bottom of the tortilla
- spoon a layer of sauce and spread over the tortilla with the back of the spoon – leave about an inch of space between the sauce and the edge of the tortilla
- sprinkle on half of the pecorino Romano and half of the mozzarella
- place another tortilla on top and let cook for about 3 minutes
- flip the quesadilla and let cook for an additional 3 minutes or until the tortilla is golden brown
- remove from pan and let stand for 1-2 minutes before cutting into fours – I like to cut them with a pizza cutter
- repeat the process with the remaining ingredients and enjoy!
