  • 4 large flour tortillas
  • 1 tbsp olive oil
  • 1 cup + extra for dipping – marinara sauce, homemade or store bought
  • 1 tbsp pecorino romano
  • 1 cup shredded mozzarella


  1. in a large skillet, heat olive oil over medium heat
  2. place one tortilla in pan and move around the pan so the olive oil in evenly coated on the bottom of the tortilla
  3. spoon a layer of sauce and spread over the tortilla with the back of the spoon – leave about an inch of space between the sauce and the edge of the tortilla
  4. sprinkle on half of the pecorino Romano and half of the mozzarella
  5. place another tortilla on top and let cook for about 3 minutes
  6. flip the quesadilla and let cook for an additional 3 minutes or until the tortilla is golden brown
  7. remove from pan and let stand for 1-2 minutes before cutting into fours – I like to cut them with a pizza cutter
  8. repeat the process with the remaining ingredients and enjoy!
