Sautéed leeks and garlic lay the aromatic foundation, while the addition of vegetable broth brings everything together in a delightful harmony.


Ingredients

  • 2 medium leeks, washed and sliced
  • 1 small head of cauliflower
  • 2 medium Yukon Gold potatoes, peeled and diced
  • 2 tbsp olive oil + more for drizzling
  • 1 clove garlic, grated
  • 34 cups vegetable broth
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Clean the leeks thoroughly, making sure to remove any dirt. Slice them into thin rounds.
  2. Cut the cauliflower into small florets.
  3. Peel and dice the Yukon Gold potatoes.
  4. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  5. Add the sliced leeks and grated garlic. Sauté for 3-4 minutes until the leeks are softened and fragrant.
  6. Add the diced potatoes and cauliflower florets to the pot. Stir well to combine with the leeks and garlic.
  7. Sprinkle salt and pepper over the vegetables. Stir to evenly distribute the seasoning.
  8. Cook the vegetables for another 5 minutes, allowing them to slightly brown.
  9. Pour in the vegetable broth, starting with 3 cups. Adjust the amount based on your desired soup consistency.
  10. Bring the mixture to a gentle boil, then reduce the heat to simmer. Cover the pot and let it cook for about 15-20 minutes or until the vegetables are tender.
  11. For a creamier texture, you can use an immersion blender to partially blend the soup. Alternatively, transfer a portion to a blender, blend, and then return it to the pot.
  12. Taste the soup and adjust the salt and pepper if needed.
  13. Ladle the soup into bowls. Drizzle each serving with a bit of olive oil.
  14. Optionally, garnish with fresh herbs or a sprinkle of grated cheese (omit if doing Whole30)
  15. Serve the soup hot and enjoy your delicious potato, leek, and cauliflower creation
