Portobello Mushroom Done Right

Flavor-packed and cheesy. The perfect one-bite appetizer
Ingredients

- 1 package of portobello mushroom caps
- fresh mozzarella – mozzarella balls are a great shortcut
- roasted red peppers (homemade or store-bought)
- 1 shallot, sliced
- balsamic glaze
- salt and pepper
Instructions
- clean mushrooms – with a wet rag gently rub the outside to remove any dirt
- place mozzarella inside the mushroom cap
- top with roasted pepper
- place prepared mushrooms on a baking sheet lined with parchment paper
- bake at 400 for 20 minutes
- while the mushrooms are baking, slice shallot
- heat oil on stovetop in a nonstick pan at medium heat
- once hot add in shallots and fry for about 1 minute. remove from pan and place on a paper towel lined plate to absorb excess oil
- when mushrooms are done remove from oven and arrange on a platter. top with crispy shallots and drizzle with balsamic glaze
- garnish with basil (if you have it)
