Family Famous Pastina

Pastina is just so good!  my all star quick dish I love having in my pocket. I know everyone will eat it and be happy while chowing down.

Pastina is my family’s version of windex. Are you sick? Pastina. Is it cold out? Pastina. Bad day? just have some Pastina. It is the ultimate family friendly comfort food. The adults crave it. Toddlers love it and babies devour it. It is a super simple, come together quickly, flavor packed, satisfying meal. Eggs included so, protein… score! A box of pastina goes a long way so chances are you’ll always have the very few ingredients needed on hand.

Growing up, any cold, rainy, or under the weather day I could pretty much bet that pastina would be on the menu, and I was never upset about it. Pastina aka the Italian penicillin is just one of those super simple dishes that never goes out of style, you crave it on those days you’re looking for that big hug from your next meal.

Another plus about this superstar dish is it goes well with pretty much anything. If pastina is not doing it as a solo artist  just add a quick side salad, serve it along side of grilled chicken or a skirt steak or some yummy roasted veggies, problem solved!

Family Famous Pastina

Ingredients

Scale
  • 1/2 cup pastina
  • 1 egg
  • 1/4 cup parmesan cheese
  • 1/4 tsp. black pepper

Instructions

  • Bring a non-stick pot filled with water to a boil on stovetop
  • beat one egg
  • add in your pastina (cook for 6 – 7 minutes)
  • drain pasta and add back into pot immediately (pot should be hot so egg can cook)
  • add in beaten egg and stir till egg is cooked through. About a minute
  • stir in parmesan cheese and black pepper
  • serve immediately or transfer to a storage container and store in refrigerator
