Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup nuts and more chocolate chip cookie dough peanut butter spread
  • 1 tbsp chia seeds
  • 1/4 cup honey
  • 1 tsp vanilla extract

Instructions

  1. add all ingredients to a large mixing bowl
  2. with a rubber spatula mix all ingredients until well combined
  3. cover with plastic wrap and put in the refrigerator for 1 hour to harden
  4. remove from the refrigerator and roll into balls – about 1 tbsp each
  5. store in an airtight container in the refrigerator – balls with stay fresh in the fridge for up to 2 weeks or up to 3 months in the freezer

Notes

  • to prevent balls from sticking to hands while rolling, spray your hands with non stick spray
  • use a small cookie scoop or melon ball scoop for even energy balls
