
Buffalo Spaghetti Squash Dip

Ingredients
1 large spaghetti squash
4–5 celery stalks, diced
8 ounces softened cream cheese
1 cup (or more if you want more spice) buffalo sauce of your choice, I like franks red hot
1/2 cup shredded cheddar cheese
olive oil
salt and pepper
Instructions
cut spaghetti squash in half and remove seeds. place spaghetti squash halves on a baking sheet flesh side up and drizzle with olive oil and sprinkle with salt and pepper. bake in a 400 degree oven for about 45 minutes. remove, let cool before scooping spaghetti squash from the skin, reserve in a bowl and set aside.
meanwhile, add the cream cheese to a medium sauce pot and heat until smooth. add in the buffalo sauce and diced celery, season with salt and pepper, mix until combined. add the spaghetti squash to the buffalo mixture and combine. Transfer to a prepared baking dish and top with cheddar cheese. Bake at 400 for 20 minutes or until cheese is bubbly. Serve warm with crackers and sliced veggies.
