  • 1 small shallot, minced
  • 1 clove garlic, grated
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp honey (optional)
  • 1 tsp dijon mustard
  • juice of 1/2 a lemon
  • 1 tsp oregano
  • 1/2 cup balsamic vinegar
  • 1/3 cup extra virgin olive oil

Instructions

  1. In a small bowl combine the shallot, Dijon mustard, grated garlic, honey (if using). The honey is optional but adds a subtle sweetness that balances the tanginess of the vinegar.
  2. add in salt, pepper, oregano, lemon juice and balsamic vinegar
  3. Slowly drizzle the extra-virgin olive oil into the bowl or jar while whisking vigorously or tightly sealing the lid and shaking well. This emulsifies the dressing, creating a smooth and creamy consistency.
  4. Taste the dressing and adjust the ingredients as needed. You can add more vinegar for tanginess, more oil for a milder flavor, or more honey for extra sweetness.
  5. Once you’ve achieved the desired balance of flavors, your classic balsamic vinaigrette is ready.
