  • 1 small shallot, minced
  • 1 clove garlic, grated
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp honey (optional)
  • 1 tsp dijon mustard
  • juice of 1/2 a lemon
  • 1 tsp oregano
  • 1/2 cup balsamic vinegar
  • 1/3 cup extra virgin olive oil

  1. In a small bowl combine the shallot, Dijon mustard, grated garlic, honey (if using). The honey is optional but adds a subtle sweetness that balances the tanginess of the vinegar.
  2. add in salt, pepper, oregano, lemon juice and balsamic vinegar
  3. Slowly drizzle the extra-virgin olive oil into the bowl or jar while whisking vigorously or tightly sealing the lid and shaking well. This emulsifies the dressing, creating a smooth and creamy consistency.
  4. Taste the dressing and adjust the ingredients as needed. You can add more vinegar for tanginess, more oil for a milder flavor, or more honey for extra sweetness.
  5. Once you’ve achieved the desired balance of flavors, your classic balsamic vinaigrette is ready.
  6. Use the dressing immediately to drizzle over your favorite salads, or store it in a sealed container in the refrigerator for up to one week. Before using it again, give the vinaigrette a good shake or whisk to recombine the ingredients.
